finally Turkey!

I m at my sweet home with my family .. I missed everybody because of I didn't see them since 8 months.I arrived to Izmir which is 3rd of biggest city in Turkey.




I left from Romania on 28th of March. Ilay and I went to Bucharest from Iasi by bus.It was snowing while we was leaving from Iasi. We arrived to Bucharest around 11 a.m. and we wait till 05:30 p.m. We had fly at that time for to go Iastanbul.

while I leave from Romania...

My Romanian story is done... As you know I came to Iasi 8 months ago for EVS program as volunteer.So this part ve complited in my life.Of course I m feeling little upset even if I gonna meet with my my family, whole friends after 8 months..

It was start in Bucharest with my Turkish friends Faik:) He had short term EVS in Valcea, Romania.We came together and we ve stayed almost 5 days in Bucharest with him Romanian friends.It was great.. We met American boys and hangout.Once time, we left at 7 a.m. from night club and we record crazy videos on the way ... Yeah we are young:)

Felicit pentru "Global Village"


Turkish Team (Romanian students)

I m little bit tired.But it is kind of sweety :) We participated to Global village in Iasi.My Turkish friend, Ilay is working AISEC Iasi as a volunteer.AISEC Iasi organized Global Village event today.There were almost 24 countries and high school students presented traditional clothes, foods and some staff from that countries. It took like 6 hours.We had great time whole day..

Açık Süt mü? - Paket Süt mü?


 " Hazır sütler" olarak bildiğimiz sütler, yine TV ekranlarında halkımıza yanlış bir şekilde anlatılmaktadır. Yazımı yazmadan önce Ege Üni. 'den değerli Prof. Dr. Mustafa Üçüncü hocamın bu konu hakkında temel bilgileri içeren kısa bir videosunun linkini  sizlerle paylaşmak isterim..

Öncelikle sütün yapısını kısaca anlatıp daha sonra günlük süt, uzun ömürlü süt tanımlarını açıklamaya çalışacağım.Tabiki bu işlemler esnasında sütün yapısında meydana gelen besin değerleri ve diğer olaylarıda en basit dilde anlatmaya çalışacağım..


Süt ve süt ürünlerine özellikle kalsiyum ve fosfor başta olmak üzere bazı önemli mineraller, protein ve riboflavin gibi bazı B grubu vitaminlerin kaynağı olarak bakıldığında halk sağlığı açısından önemli bir besin grubudur. Süt proteinlerinin vücutta bilinen büyümegelişmeye katkısı, doku farklılaşmalarındaki etkinliğinin yanı sıra; kalsiyum emilimi ve immün fonksiyonlar üzerine olumlu etkilerinin olduğu, kan basıncını ve kanser riskini azalttığı, vücut ağırlığının kontrolünde etkin olduğu, diş çürüklerine karşı koruyucu olduğu bilinmektedir.

and then Bosnia

I was still on travel to Balkan countries, as you know :) After Crotia, we went to Bosnia.Everybody knows Bosnia small country and it has bad memories from war times..

I was excited while I was leaving from Zagreb for Sarajevo.You can use train or bus between this cities.We took bus and duration like 8 hours. http://www.akz.hr/default.aspx?id=261 Zagreb bus station and ticket almost 22 euros.

We took bus and arrived in the morning to Sarajevo.I found Turkish friend from couchsurfing again.

We got really good friend after this trip. Also I went 2nd time with Ilay:) We ve stayed 2 weeks in 2nd time.It was great time for us.Because we had missed Turkish life, friend and foods.We could find everything in there and we shared good time, memories with them. That guys students in Sarajevo. 


I think that was best part in my trip.Because I gained new good friends... Thank you guys for everything.I love you! we ll meet in Turkey :)

Lets discover the city!
Sarajevo small and old city.You can see some signs on the buildings from war time...
The city itself encompasses four quarters: the old town (Baščaršija), the new town, the centre and New Sarajevo. Each district provides every traveller endless opportunities: for relaxation, vigorous sightseeing and, above all, the unique experiences gained as you share this city with Sarajevo's locals. There is a 2 part in the city center like ottoman part and hungary part. The city is historically famous for its traditional religious diversity, with adherents of Islam, Orthodoxy, Catholicism and Judaism coexisting there for centuries. 

Bascarsija; actually this part has Turkish style. This is the hub of the old town, and main attraction of Sarajevo, mainly in Turkish style, shops , places to eat and drink, just enjoy the atmosphere. This is where all the trams head for.The pigeons are here as well. the Bosnians have there own coffee places and cafes serving cevapi and the like.
 If you know Bursa, Turkey.This city very look like Bursa city. I was so happy when I ve seen that part as a Turkish person.Because, here is also my history from Ottoman and people like Turkish people. 
One taxi driver said me " why you didn't say I m Turkish" when I got out from him taxi.


 















Gazi Husrev Bey MosqueIt is situated in the middle of Bascarsija, Old Town. Also this was a place where i met some more tourists. Bey's mosque was built in 1530. It represents the most beautiful islamic architecture in Bosnia and Herzegovina. Gazi Husrev-bey built the mosque, he was Herzegovinian by his father and his mother was a princess Selguicca, the daughter of Sultan Bayazit II. When he came to Sarajevo, the population was 8000 people and he had merit in development and progress of the town.

 


Ali Pasha Mosque; It was completed in 1561 after plans of Hadim Ali Pasha. Later, at the end of the 19th century it was completely restored.The Ali Pasha's Mosque is located in a small green park at the western end of the busy street Marsala Tita.  






Sebilij FountainSebilj is an arabic word for fountain. It is special wooden fountain surrounded by houndreds pigeons, located in a small square in Bascarsija. It was built in 18.century and later relocated by czech architect Alexander Vitek.



Latin Bridge; The Latin Bridge is an historic bridge over the River Miljacka in Sarajevo. On 28th of June 1914. archduke Franz Ferdinand and his wife were assassinated in the vicinity of this bridge.The World War I followed.

 



Eternal Flame;Located at the end of pedestrian Ferhadija, where it meets Marshal Tito Street, Sarajevo`s Eternal Flame is a monument to Bosnians killed during the Second World War. Sarajevo had been occupied by Nazi and Croatian forces for four years before it was freed in 1946. See the linked Wikipedia page for a translation of what is written on the monument.


Catholic Cathedral; It was built in new Gothic style with new Romanesque elements in 1889. The damages of the early 1990's war aren't visible anymore, as the church has been completely restored recently.



You should eat "cevap" and bosnian borek . It is traditıonal and so delicious bosnian food.You can find some places in old town.Aslo you should try bosnian coffe.It has some taste with Turkish coffe."Palacinka" my favorite Bosnian desert . It is pancake that include chocolate inside.You can eat with crema and ice cream.

I really love Sarajevo, I gained good closed friends.. I had great time and I felt like in Turkey:) People are very friendly and they have delicious food. Have a fun in Sarajevo!

Hayatta "Bozulmayan Yoğurt" ta Gördük!

Sadece bir haber başlığı ve bunun gibi yalan yanlış haberler toplumumuzu yanıltmaya devam ediyor!

Gün geçmiyor ki sürekli birileri TV na çıkıp, " bozulmayan yoğurt" denilen yoğurtları yememizi, tehlike saçtığını söylüyor.Eskiden yoğrutlarımız bozulurdu, sağlıklıydı.. vs. Evet ama eskiden teknoloji bu kadar gelişmiş değildi.Bu yüzden herkes evinde mayalardı yoğurtları.
Ev yapımı olan bu yoğurtlar, sütlerin yeterince mikroorganizmalardan arınamamış, taze maya kullanılmaması,mayalamanın uygun sıcaklıkta ve sürede yapılmamış olması nedeniyle daha çabuk ekşir veya küflernir.

Hazır yoğurtlar ise teknoloji ile maksimum hijyen koşullarında üretilip, yoğurt için kullanılan sütlerde herhangi bir mikroorganizma oluşumu gözlenmediğinden ve  uygun koşullarda saklandığı için daha uzun raf ömrüne sahiptir.

Belki düşünebilirsiniz bunları doktorlar söylüyor.Peki doktorların meslek alanı gıdalar mıdır? 

Cevap; Hayır değil mi? :) Güzel bu cevap işte herşeyi açıklıyor.O zaman bir doktor Gıda Teknolojisini bir Gıda Mühendisinden daha iyi bilemez değil mi. Peki hala neden toplum olarak hala bu konuda yeterince bilgisi olmayan insanlara güveniyoruz.Sadece mantık çerçevesinde düşünelim derim...!

Çok teknik ayrıntıya girmeden, kısaca yoğurt üretim aşamalarını yazacağım.

1. çiğ süt :         taze olması, bakteriyolojik kalitesinin iyi olması gerekir.

2. klarifikasyon:  sütün temizlenmesi aşamasıdır.

3. standardizasyon: yoğurda işlenecek sütün, yağının standardize edilmesi işletme ekonomisi açısından gereklidir.

4. kurumadde artırılması: süte koyulaştırılmış süt ilave etmek , süte iyi nitelikli süttozu veya peynir suyu tozu ilave etmek ,süte çeşitli stabilize edici maddeler ilave etmek (selüloz vb.) , evaporasyon (buharlaştırma) 
ülkemizde yaygın olarak kullanılan yöntemlerin başında evaporasyon ve süttozu ilavesi gelmektedir. Ayrıca ülkemizde Türk Gıda Kodeksine göre, katkı maddesi kullanımı yasaktır.

genellikle süttozu % 1-3 oranında katılmaktadır.
Süttozu yine kreması çekilmiş sütten elde edilen bir süt ürünüdür.

evaporasyonda ise suyun % 10-25 oranında sütten ayrılması sağlanır. bu koyulaştırma yöntemi yoğurdun kalitesi açısından çok iyi sonuç vermektedir.

5. ön ısıtma ve homojenizasyon: yoğurdun daha kıvamlı olması, aroma gelişimi için önemli aşamadır.Süt yağının süte eşit dağılımını sağlayan önemli aşamalardandır.

6. isı işlemi: bakterilerin imhası

7. soğutma: pastörize edilen sütün, yoğurt oluşumunu sağlayacak mikroorganizmaların faaliyet gösterdikleri sıcaklığa soğutulması gerekmektedir .

8. kültür ilavesi, paketleme : mayalanma

9. Depolama

Buradan 4. maddeye dönmek istiyorum.Çünkü ülkemizde denetlenmeyen firmaların çoğu katkı maddesi kullandığı gerçektir malesef... 

Katkı maddesi yani stabilizatörlerin kullanım amacı yoğurttan ayrılan su miktarını azaltmak ve kıvam artırmaktır.Dünya da birçok ülkede uygun stabilizatörlerin kullanımı serbestir. Yapılan araştırmalarda da stabilizatörlerin kullanımları araştırılmış ve yoğurt üretiminde kullanılacak süte stabilizatörlerin ilavesi yoğurt tadında bozukluk yapmayacak oranlarda olması kanısına varılmıştır.


Sonuç olarak; yoğrutlarımızın bozulmama değil, uzun ömürlü olmalarının nedeni var.Uygulanan teknolojilerin hepsi yıllarca yapılan akademik çalışmalar sonucu şekil almış ve kullanılan her maddelerin yoğurta, insan sağlığına etkisi araştırılmıştır.Bunun sonuçlarınıda sizlere ilk paragraflarımda kısaca açıklamaya çalıştım.

Yoğurdunuzu iç rahatlığıyla tüketebilirsiniz.Yineliyorum uzun ömürlü olmasının nedeni hijyenik ortamda uygylanan teknolojidir!

New Route is Croatia!


Hrvatska! You have beautiful seaside cities, places...  

I just would like to introduce seaside part, firstly.There are 2 cities that my favorites.After that I gonna write about my trip in Zagreb.
:)


This pictures from Dubrovnik that name in  Turkish history Ragusa.Dubrovnik is a well know town in Dalmatia.The oldest part of Dubrovnik, the Old Town is located east of Lapad at the bottom of Srd hill. It has well preserved cultural and historical heritage and is therefore  inscribed on the UNESCO’s List of World Heritage Sites. Old Town’s street and squares are stone-paved while the architecture consist of ellegant terraced houses, monasteries, churches, palaces, galleries and museums. Dubrovnik also offers good holiday opportunity in terms of sea, sun, night life, restaurants and taverns with various specialities of local as well as international cuisine.

Here is Split.Split is the second largest city in Croatia and is the largest city on the Adriatic coast.it emerged from a settlement around a palace built by Roman emperor.Trogir is probably one of the best - and easiest - places to visit from Split and what a place it is to visit. A UNESCO World Heritage site, the town is situated on a small island (although connected to the mainland by a very short bridge) and its wonderful sights (including the must-see cathedral, possibly one of the best in Croatia) can be easily. covered in a day.Founded by the Greeks and then an Illryian settlement, Solin - or Salona as it was known then - became a major Roman settlement, the largest in Dalmatia.
Split is so beautiful and to have important history.You can see lots of things.So more information just visit http://www.split.info/ .

Now Zagreb! After the Belgrade my friend and I decided to go Zagreb.Because we were gonna meet with our my Turkish friends.We had promised each other.They also were on travel by car in Balkans.Turgay and Serhat crazy and funny guys. Before the Zagreb, we just met on coucsurfing when I was checking information about trip.We got train and we arrived around 11 p.m. to Zagreb. Train tickets almost 24 euros and destination is 8 hours from Belgrade.My croatian friend pick up us from train station.I love couchsurfing:) He is  so relax and cultured person.We are stiil friend.I always say I got amazing social network and friends.He ll come to visit to Turkey.

       


As you see above, that part Zagreb's center .Zagreb is capital city.City is so regular and clean.Also this part's name Gornji Grad- Upper Town.There is a big and historical church.The Cathedral of the Assumption of the Blessed Virgin Mary was formerly known as St Stephen's Cathedral. The twin Spires of the Cathedral are a landmark feature of Zagreb and the most famous structure in Zagreb. A cathedral has stood on this spot for hundreds of years.


The Tower of Lotrscak (Kula Lotrscak), which dates to the 13th Century, was built to guard the southern gate of the Gradec town wall. The square Romanesque tower once held a bell, which rang out each night prior to the closing of the gates.Visitors can climb the tower for stunning views over the city. In the tower visitors will find an exhibition gallery and gift shops.





The cobble stone streets with red tile roof buildings of the medieval Gornji Grad (Upper Town) are a beautiful place to start a sightseeing tour of Zagreb. Gornji Grad is home to the cities Cathedral, parliament building, numerous museums, and churches. This is the most beautiful area of the Zagreb and a good place to spend a day or at least a few hours.

I gave some information about city center.We were hungry of course.After we started to look  some places for eating.After that I saw ""Lokma"".Lokma was small places that have very delicious Turkish food.Because here is Turkish restaurant and owner also Turkish.We met him.I was so happy.Because I had found Turkish food and Turkish family while I was on trip.


We found Turkish Restaurant.It was so delicious.


After that we went to Donji Grad (Lower Town).Here is a relatively modern area of Zagreb, with museums, galleries and the National Theatre. This area, also known as the horseshoes, is spread out around numerous parks, which form a U shape.

      This streets always full and really live city.
we stayed 3 days in Croatia.2nd day, we met our Turkish friends in city center.It was Their last nigts on trip.We went to night club:) we are young and we need fun .. That nigt we had fun a lot! you can discover by walk easly.You need just 1-2 days.Good luck..
So, Croatia is over! :) I had great time on this trip.I liked this country and cties... People also so kind.They likes Turkish people.
